2 Keys to having a relaxing holiday: Planning & Preparation

Don't you just love those relaxing days between Christmas and New Years?

Don't get me wrong, I also love all the festivities of Christmas, especially cooking the traditional food and getting together with my family and friends, but when it's over I love to just relax and read a book or work on a puzzle and play games with the family. Nothing pressing to do.

But wait!!! The family still expects to eat. Don't ask me why, you'd think with all that Christmas deliciousness they'd be satisfied!

Unfortunately, if I have focused all of my planning and cooking on Christmas Eve and Christmas Dinner, once the leftovers are gone, (Boxing Day in our house), there isn't much left to eat. This is assuming I have hosted and I have leftovers.

If I haven't planned or prepared I am left stressing about what to cook instead of relaxing with my book.
And if that book is just too good to put down I end up peering in the fridge trying to throw something together at the last minute. Ordering in or going out to eat has it's place, occassionally, but becomes old very quickly and when it comes to eating healthy it just won't do.

Dang it! Why am I just thinking about it now?

With only 3 days left until Christmas, I am already up to my chin with stuff to do. All too often, in the past, I have found myself in this dilemma, but not this year. These days I treasure my relaxing time too much to be unprepared.

Don't worry it's not too late.

Here are a couple of yummy, easy, fast chicken recipes that I make often and can easily have enough for 4 meals put together in 20 minutes. The baked beans will take about 20 minutes for the preliminary prep. Pop them into your freezer. Pull them out when you are ready and go back to your relaxing while they cook in the slow cooker or bake in the oven.

Start by buying a couple of packages of chicken big enough to either prepare 4 or 6 separate meals or a couple of larger portions and have leftovers. Be sure to double the sauce ingredients if you double the chicken.

You can even pre cook your grains and freeze in portions if you wish.

Large freezer bags work well because you can flatten them to take up less space in your freezer but any freezable container with lid will work.

Recipe #1

Oriental Chicken Drumsticks or Breasts

5 chicken breasts or 10 chicken drumsticks
Warm slightly in a saucepan:
1/3 cup honey
Stir in and mix well:
2 TBSP olive oil
3 TBSP soy sauce
2 TBSP ketchup (optional)
1 tsp fresh ginger, grated or minced
1-2 cloves of garlic, minced

Put chicken into freezer bag, pour over chicken the rest of ingredients and seal, squeezing air out. Turn upside down a couple of times to evenly spread sauce.




Drumsticks in sauce already to go into the freezer.

2 Cooking Instructions:

1. Empty frozen contents of freezer bag into a slow cooker, set on low for 4-6 hours. If you turn up to high for the last hour the chicken will brown, turn the chicken so it browns on both sides.
or
2. Thaw. Empty into a baking dish and cook at 350F for one hour.

Serve with sauce over cooked brown basmati or quinoa adding a green salad and steamed carrots or broccoli for a complete meal.




Oriental chicken drumsticks with roasted vegetables and a salad. So good and so easy.

Recipe #2

Lemon and Garlic chicken

3-5 chicken breasts or 8-10 chicken drumsticks

Put chicken into large freezer bag and support so it stays upright.

Add:
4 TBSP olive oil
2-3 garlic cloves, minced
3 TBSP lemon juice
1 tsp sea salt or himilayan rock salt.
Fresh thyme or chopped parsley(optional)

Seal the freezer bag while squeezing out the air. Turn bag back and forth to evenly mix the marinade. Flatten and freeze.

2 Cooking Instructions:

1. Empty frozen contents of freezer bag into a slow cooker, set on low for 4-6 hours. If you turn up to high for the last hour the chicken will brown. Or if you are home cook on High for 4 hours turning after 2 hours to brown both sides.
or
2. Thaw. Empty into a baking dish and cook at 350F for one hour.

Serve with sauce over cooked brown basmati or quinoa adding a green salad and steamed carrots or broccoli for a complete meal.

Recipe #3

Sweet and Tangy Baked Beans with Baked Potato

Saute in skillet on med heat for 5 min:

2 TBSP olive oil
2 cups chopped onion

Add:
4 cloves of garlic, minced
2 tsp salt
1 TBSP chili pd
2 tsp cumin
1 1/2 tsp dry mustard
6 TBSP apple cider vinegar
3 TBSP coconut sugar or 3 TBSP Molasses

Saute for another 5-8 minutes
Mix beans into sauteed mixture
Add 2 cups diced tomatoes without the juice
3 medium apples cut into chunks.

Scrape all ingredients into a freezer bag, flatten and freeze.

2 Cooking Instructions:

1. Empty frozen contents of freezer bag into a greased slow cooker, set on low for 4-6 hours.

2. Thaw. Empty into a baking dish and cook at 350F for one hour.

If baking add one medium scrubbed and oiled potatoe per person to the oven at the same time. Bake for 1 hour or until fork pierces easily.

Cut open potato and scoop baked beans over the top. Add butter or sour cream to baked potato before adding beans if desired. Pair with green salad or coleslaw.
